All fresh fruits including pineapple are packed with enzymes however pineapple is well known for being packed with an enzyme called bromelain. This gives the fruit some amazing natural anti-inflammatory and analgesic properties. Of course like most fruits it's bursting with vitamin C. They are second only to bananas as America's favorite tropical fruit.

It is this the enzyme bromelain that makes pineapple useful in treating bruises, sprains and strains by reducing swelling, tenderness and pain. Bromelain also acts as a digestive enzymes aiding in protein digestion. Most of the bromelain is concentrated in the core of the pineapple and for this reason I always add the stem to my smoothies. Pineapple is also known to help with fluid retention.

To gain the benefit of bromelain as an anti-inflammatory or as a digestive enzyme, it is important to know that enzymes are very sensitive to light and temperatures especially heat. So any commercially bought pineapple products will be dead so to speak, the enzymes will have been destroyed. This goes for bought juices, canned, frozen, and dried pineapple.

When choosing a fresh pineapple color isn't necessarily a good indicator of ripeness, some are in their prime when still green, it depends on the variety, ranging from green to yellow. The most important factor in determining ripeness is aroma let your nose help you decide. Ripe pineapples give off a sweet, fresh tropical smell. Avoid pineapples that give off a slightly alcoholic smell, they are too ripe and are fermenting. Avoid pineapples with soft spots or areas of dark discoloration. Eat pineapple at room temperature to appreciate their full flavor.

Leave the leaves on the pineapple and cut a pineapple in half length ways. Scoop or cut out the flesh leaving the pineapple halves in tack to use as containers. Cut up the flesh into cubes removing the stem. Put the pineapple into a bowl, add freshly grated ginger to taste, thick coconut milk and a little rum, slice or chop up bananas and mix all ingredients together. Place the ingredients back into the pineapple halves and serve immediately.

Pineapple makes a very good addition to smoothies, with papaya, some pumpkin seeds, flaxseeds, and a banana. Besides being high in bromelain and vitamin C, pineapples are also a rich source of beta carotene, potassium, vitamin B-1 (cofactor in enzymatic reactions vital to energy production, vitamin B-2, iron, fiber, manganese (co-factor in a number of enzymes needed for energy production and anti-oxidant defense), omega-3 fatty acids, calcium and some friendly bacteria.

What Foods To Eat To Lose Weight

Crackers generally have a high GI, even if they are whole grain , this is because they are made from finely milled grains which raises the GI. Brown rice has a high GI but it is still better than white rice due to its minerals and vitamins.

Fruits generally have a moderate GI and although they are high in sugar, most have it in the form of fructose which is not converted to glucose. They are also high in fiber. Avoid ripe bananas because they have high GI compared to unripe banana because the starch in them turns to sugar. Go easy on high GI fruits such as pineapples, mangoes and melons. Go for apples instead.

Once you start becoming aware of what foods make for a high glycemic index, you will begin to eat more wisely and not compromising on your weight loss effort. If you are overweight you still need to consult your doctor on your overall health and weight status and get proper guidance.

Jello Mold Recipe - Lime Jello Cottage Cheese Recipe

Here is a great lime Jello with pineapple recipe that uses cottage cheese instead of the heavier cream cheese. It makes a very pretty molded gelatin dessert to serve on top of salad greens, or as a nice luncheon centerpiece.

2 boxes lime gelatin

2 cups boiling water

2 cups cold water

4 tablespoons mayonnaise

1 (16 oz.) container cottage cheese, small curd

1 (16 oz.) can crushed pineapple, drained

Miniature marshmallows

1 (12oz.) container Cool Whip

Directions

In a medium bowl, Add boiling water to the two packages of lime gelatin; stir until gelatin is dissolved completely. Pour in cold water and stir. Stir the mayonnaise into the cottage cheese. Add cottage cheese to gelatin mixture.

Mix in the pineapple and stir until gelatin begins to thicken. Pour into the Jello mold. Put in refrigerator and chill until gelatin is firmly set. Unmold gelatin onto a serving plate.

Add marshmallows to Cool Whip and then spread over top of gelatin.

o 2 eggs
o 4 bananas

o 1 can drained crushed pineapples
o ½ cup chopped walnuts

Directions:

o Combine two cups of graham cracker crumbs with one stick of butter.
o Spread this into a closed pan and refrigerate.
o Combine two cups sifted confectioner's sugar with two eggs, one stick of butter and one teaspoon of vanilla extract.
o Beat it for about five minutes until it becomes fluffy.
o Spread over the first mixture.
o Slice four to five bananas over the cream mixture.
o Spread one can of drained crushed pineapple over the bananas.
o Spread the large cool whip over the pineapple.
o Sprinkle chopped walnuts on the cool whip.
o Keep this refrigerated until ready to serve.

3. Baked Fudge Dessert

Ingredients:

Batter
o 3 tablespoons shortening
o 1 cup flour
o ¼ teaspoon salt
o ½ cup chopped nuts
o ¾ cup of sugar
o 1 ½ teaspoon baking powder
o ½ cup of milk

Directions:

o In a large bowl, combine sugar, cream shortening, baking powder, flour and salt.

o 1 cup of boiling water

o Blend cocoa with brown sugar and salt.

o Pour the boiling water.
o Bake it for about 375o F (approximately 40 minutes)

4. Baked Banana and Peach Dessert

Ingredients:

o 2 peaches, chopped or sliced
o ½ teaspoon of vanilla
o 1 tablespoon of sugar
o 2 bananas, sliced in half lengthwise

Directions:

o In a small sauce pan, mix in vanilla, sugar and peach puree.
o Heat it onto a boiling stage.
o Cover and allow simmering for about one minute, stirring occasionally.

1 pkg (4 serving size) instant vanilla pudding & pie filling mix

4 eggs

1 cup water

1/2 cup oil

HOW TO:
Preheat Oven to 350 degrees
For topping, melt butter over low heat in 12" cast iron skillet. Arrange pineapple slices, cherries and walnut halves in skillet
3. For cake combine cake mix, pudding mix,eggs,water & oil in large mixing bowl. Mix at med speed with electric mixer for 2 minutes. Pour batter evenly over fruit in skillet. Bake at 350 for about 1 hour or until toothpick inserted into center comes out clean. Invert onto a serving plate. Serve to guests & ENJOY!

Combining Food For Anti Aging

We all want to loose weight, look younger and feel healthier. Why not use the proper combinations of foods to accomplish this; after all we are what we eat. We may not be able to accomplish all of our goals but we can certainly slow down the effects of the aging process on our bodies. More and more people are discovering that combining the proper foods to reverse the aging process is a good start.

Food combination is the process of ingestion certain foods together while avoiding other food combinations altogether. This is not any type of diet where some foods are not eaten. It only means that certain combinations of foods are not eaten at the same time. The body takes different amount of time to digest different foods depending on the general type of food being eaten. For example, it is believed that you should not eat proteins with starchy foods or that acidic and alkaline foods should not to be eaten together.

If you go back far enough in human history you will conclude that eating different foods at the same time was not the norm. Humans wander around in small family groups looking for food. When then came upon a food source such as a nut for fruit tree or if they found or killed an animal it was eaten on the spot. If any of the food was left after the eating binge then the excess food may have been saved for later use.

The human body adapted to this food availability by producing different enzymes to digest different types of foods. Carbohydrates require carbohydrate digesting enzymes and Proteins require protein digesting enzymes. The production of protein enzymes and carbohydrate enzymes at the same time can lead can lead to indigestion, gas, cramping and the poor digestion of foods.

Here is a list of nine general rules for a proper food combination diet.

1) Carbohydrates (Bread, Potatoes, Rice, Wheat) should not be eaten with Acidic Foods (Tomato, Pineapples, Grapefruits, Oranges). Ptyalin enzyme is used to digest alkaline foods and is destroyed by acidic foods. The eating of acidic foods with carbohydrates can lead to a fermentation process that produces gas. Citrus fruits can safely be eaten as a snack from 30 minutes to 1 hour prior to a regular meal. Tomatoes can be eaten with green leafy vegetables and fatty foods.

2) Proteins (Meat, Cheese, Eggs, Nuts) should not be eaten with Carbohydrates (Potatoes, Grains, Sweet Fruits, most Desserts).

3) Two different Proteins at the same time. Do not combine Meat, Cheese, Eggs, Nuts, Milk. The enzyme require to digest proteins need to be in different strengths for different proteins.

4) Proteins and Fats. Eat only lean meats because fats will suppress the appetite thus retarding the production of protein digestive enzymes.

5) Proteins (Meat, Cheese, Eggs, Nuts) should not be eaten with Acidic Foods (Tomato, Pineapples, Grapefruits, Oranges). Same reasoning as rule 1.

6) Starches (Potatoes, Grains, Cereals) should not be eaten with Sugars. Sugar causes the mouth to produce an excessive amount of saliva which will dilute the concentration of ptyalin in the stomach.

7) Starches (Potatoes, Grains, Cereals) should not be eaten with other Starches.

8) Melons should always be eaten alone. The digestion of melons happens very quickly and can be eaten as a snack from 30 minutes to 1 hour prior to a regular meal.

9) Milk should always be ingested alone. Milk requires a very specific enzyme to be digested properly.

At first glance the above rules will not allow you to maintain a balance diet. You will still need to maintain a balance diet just do not eat a serving from each of the food groups at the same time. Divide up you eating day into smaller units with the correct combinations of foods in them will go a long way in your fight against the aging process. We need our bodies the chance to digest what we eat properly.

Proper food combining encourages you to eat healthily. You will be getting more of the vitamins and minerals your body needs. Your skin will become clearer and healthier looking. No more indigestion or gas, you will have more energy, no more limp hair or pasty skin. Food combining for anti-aging purposes is a great way to fight the rigors of time.

Give them as gifts as well. Bake your bread in round tins or mini-loaf pans. After baking and allowing the bread to cool, wrap in plastic wrap and tie up with a colorful ribbon. Simple and delicious and a perfect little gift!

Try this recipe for Boston Brown Bread. Like many quick bread recipes, this bread is delightful when spread with cream cheese or butter.

Boston Brown Bread

2½ C flour
2 tsp baking soda
1 tsp salt 1 ½ C raisins
2 C water
1 C sugar
1 T shortening
1 egg
3-4 tins/cans

Directions:


Preheat oven to 350 degrees F.
Prepare tins - use shortening or a cooking spray to grease the inside of cans.
Combine the flour, soda, and salt in a medium bowl. Set aside.
To a pot, add raisins and water. Heat to boiling point.
While the raisins and water are heating, in a large bowl add the sugar and shortening. Combine.
Add the egg to the sugar mixture and beat until creamy.
Once the raisins and water come to a boil, remove from heat.

Alternating between the raisin mixture and the flour mixture, begin adding them to the creamy mixture. Add - combine - add - combine - until the raisin mixture and the flour mixture are combined with the creamy mixture.
Pour the batter into 3-4 tins/cans about 1/2 full. Note. You can also use small bread tins.
Let stand for 15 minutes.
Bake for 1 hour.
