Heavenly Banana Pudding Recipe

My grandson reminded me of this recipe after hounding me for several weeks to make this. You know how it is, I hadn't gotten around to getting all the necessary ingredients since I know he would tell me if something was missing! So my grandson, the resourceful little one, bicycled to the store just up the country road and brought all these ingredients back making sure that I had to make this for him. God bless him, he knows that if you want something bad enough, you can make it happen!

3 boxes of instant vanilla pudding

5 cups of milk

1(8oz.)of sour cream

1 large container of cool whip

1-2 boxes of vanilla wafers

Lots of bananas

Mix the 3 boxes of pudding with the milk, add sour cream and cool whip. Place a layer of wafers & bananas in the large dish - cover with a layer of pudding mix. Continue with wafers, bananas, & pudding. Cover and place in the refrigerator. This is best made night before served. Wafers need to soften.

I ALSO LIKE TO ADD PINEAPPLES YOU JUST ADD A LAYER OF BANANA AND A LAYER OF PINEAPPLE. THIS IS REALLY GOOD. My grandson still loves it with the original ingredients and he's always telling me, Grandma, you don't go messing up something that's already good, so I'll let you all make that decision. Delicious Cakes Made With Fruit - Pineapple Chiffon and Peach Pudding Cake Recipes

Fruits are always refreshing and they are delicious in cakes. These cake recipes made with fruit in them will be crowd pleasers. Try the Pineapple Chiffon for a light and luscious cake. The cake is made with pineapple juice and the filling/frosting with crushed pineapple. The Peach Pudding Cake is a totally different type of cake and is baked with 6 fresh peaches. Both are delicious!

PINEAPPLE CHIFFON CAKE

Pine Apples

2 1/4 cups sifted cake flour
1 1/2 cups sugar
1 tbsp baking powder
1 tsp salt
1/2 cup canola oil
5 egg yolks
3/4 cup unsweetened pineapple juice
1 cup egg whites (approx. 8 eggs)
1/2 tsp cream of tartar

Topping:

2 cups whipping cream
1 can (20-oz) can crushed pineapple, well drained

Sift together the flour, sugar, baking powder and salt. Make a well in the center of the flour mixture and add, in this order, the oil, egg yolks, and pineapple juice. Beat until smooth. In a large mixing bowl, beat egg whites and the cream of tartar until very stiff peaks form. Pour batter in a thin stream over all egg white surface; fold in gently. Bake in an ungreased 10-inch tube pan at 350 degrees for 60 minutes. Invert pan. Allow cake to cool. Remove from pan and split into 2 layers. Fill and frost with the topping mix.

To make topping: Whip the whipping cream until creamy stiff. Fold into the crushed pineapple. Use to fill and frost the chiffon cake.

PEACH PUDDING CAKE

6 ripe peaches, peeled and halved
2 tsp brown sugar
1/2 tsp vanilla extract
1/4 cup water
8 tbsp butter, softened
1/2 cup sugar
2 eggs
1 cup self-rising flour
1/4 tsp salt

Preheat oven to 350 degrees. Grease and lightly flour a 9-inch round cake pan; set aside.

In a large skillet, place the peaches with the cut side down. Add the brown sugar, vanilla, and water. Simmer mixture for 5 minutes. Allow to cool.

In a large mixing bowl, using an electric mixer at medium speed, combine the butter and sugar until well blended. Add the eggs to the sugar mixture and beat until light and fluffy. Add the flour, salt, and the cooked syrup from the peaches; beat until well blended. Place the peaches, cut side down, in the prepared baking pan. Top the peaches with the batter mixture. Bake at 350 degrees for 35 to 40 minutes or until golden in color and a wooden toothpick inserted in the center comes out clean. After cake cools, sprinkle with powdered sugar if desired.

Great Pudding Recipes - Bread Pudding With Lemon Sauce and Very Easy Banana Pudding

Bread pudding is a delicious staple in the South. It is perfect to serve with coffee to your friends. Whether it is served after a meal or just for a special occasion, this recipe for Bread Pudding with Lemon Sauce is sure to please. In a big hurry? Try this Very Easy Banana Pudding.

BREAD PUDDING WITH LEMON SAUCE
2 cups dry bread cubes
4 cups milk, scalded
1 tbsp butter
1/4 tsp salt
3/4 cup sugar
4 slightly beaten eggs
1 tsp vanilla extract

Pine Apples

Soak bread in milk for 5 minutes. Add the butter, salt, and sugar. Pour the bread mixture slowly over the beaten eggs. Add the vanilla and mix well. Pour into a greased baking dish. Bake in a pan of hot water in 350 degree oven until pudding is firm; about 50 minutes. Serve while warm with the Lemon sauce.

Lemon Sauce:

1/2 cup sugar
1 tbsp cornstarch
1/8 tsp salt
1/8 tsp nutmeg
1 cup boiling water
2 tbsp butter
1 1/2 tbsp lemon juice

In a 1-quart saucepan, mix together the sugar, cornstarch, salt, and nutmeg. Gradually add in the water and cook over low heat until thick and clear. Add the butter and lemon juice; blend thoroughly. Pour over the bread pudding.

VERY EASY BANANA PUDDING
3 cups cold milk
2 pkg (4 serving size each) banana flavor instant pudding and pie filling mix
Approximately 30 vanilla wafers
3 medium bananas, sliced
1 8-oz frozen whipped topping, thawed

Pour milk into a large mixing bowl. Add pudding mixes to milk and beat using a wire whisk for 2 minutes or until well blended. Let stand for about 5 minutes. Arrange half of the vanilla wafers in the bottom and up the sides of a serving bowl. Add layers of banana slices and pudding, ending with pudding. Spread the whipped topping over the pudding. Refrigerate until serving time.

Note: To keep bananas from discoloring, dip in lemon juice or pineapple juice before layering with the pudding.

Recipe for Pina Colada Bread Pudding

What You Need

1 loaf French bread Frozen pina colada drink mix 10 ounce ¾ cup pineapple juice 1 can evaporated milk 12 ounce ½ cup cream of coconut 2 large sliced bananas 3 eggs ¼ cup light rum 1 cup raisins 1 cup crushed pineapple and juice 1 teaspoon grated lemon zest Fresh mint sprigsHow to Make It

Peel the crust from the French bread and cut off the end pieces. Cut bread into 1 inch size cubes and then set aside until needed. You can discard the other pieces of bread or reserve them for future use by storing them in the freezer.

Using a food processor or blender you will add half of each of the following ingredients the frozen pina colada drink mix, pineapple juice, evaporated milk, cream of coconut and sliced bananas. Process these ingredients until they are a puree. Pour this mixture into a medium size bowl, setting it aside until needed.

Add the remaining half of the pineapple juice, evaporated milk, cream of coconut and the sliced bananas to the food processor or blender and then process to puree. Add the eggs and the light rum and then continue processing.

Add this puree mixture to the bowl with the other puree mixture and mix well. Set aside until needed.

Using a small bowl you will add the raisins and the crushed pineapple and juice. Set aside until needed.

In your crockpot you will add about 2/3 of the French bread cubes. Sprinkle in half of the grated lemon zest and then spread about a cup of the pineapple raisin mixture over the bread cubes.

Add the remaining French bread cubes evenly over the top of the mixture in the crockpot. Add the remaining lemon zest and then another layer of the pineapple raisin mixture. Add the remaining puree mixture.

Cover with lid and then cook on low for about 6 hours or until done.

Garnish with fresh mint sprigs and serve hot.
