Fresh Fruit and Vegetable Storage - How to Make Your Produce Last Longer

You made the commitment to healthier eating, and decided to incorporate more fruits and vegetables into your daily diet. Fruits and vegetables can be expensive, and you don't have time to shop at the market every day. How can you make that precious produce last longer at home? Follow these tips for proper fruit and vegetable storage.  

With a little planning, eat the produce that will spoil first, and work your way through the other produce as the week progresses. To avoid conducting a séance to bring your lettuce back to life, use following ideas help keep produce fresh.  

Two main things to remember:  

o Do not wash produce until you are ready to eat it.  

o Store fruits and vegetables separately.  

Proper Fruit Storage  

1.    Fruits like low moisture. Berries last about three days so eat those first. Store unwashed strawberries on a paper towel in a sealed plastic storage container.  

2.    Berries, oranges, pineapples, cherries, grapes and watermelon do not ripen after picking. Put them directly into the refrigerator. Lemons and limes can be kept on the counter, but last longer in the refrigerator.   

3.    Buy bananas green, and let them ripen to use when you want them. Banana skins turn black in the refrigerator, but the fruit will still taste the same. When bananas are overly ripe, peel them, put them in small food or fruit storage bags and freeze them for smoothies.  

4.    Ripen certain fruits on the counter and move them to the refrigerator when they are soft to the touch. Unripe pears, apricots, peaches, plums, mangoes, honeydew melons, cantaloupes, bananas, kiwis, and avocados can soften on the counter. Once they turn soft to the touch, move them into the refrigerator.  Apples will also continue to ripen.  Put un-bruised apples in the refrigerator to keep them crisp for many weeks.

Vegetable Storage

1.    In general, vegetables stay fresh in a moist environment, which means the crisper drawer of the refrigerator.  Keep only the broccoli in a bag so the whole refrigerator doesn't smell like broccoli. If you don't have a crisper drawer, store the vegetables wrapped in a plastic bag on in a plastic container.    

2.    Too much moisture can be bad for your vegetables, and brown spots will develop especially on lettuce if it is too damp.  

3.    Store tomatoes on the counter and only chill them right before serving.  

4.  Potatoes, onions, eggplant, and hard shell squashes should be stored in a cool, dry place.  

Following these guidelines will ensure you get the most value and flavor from your fresh fruits and vegetables.

You could get different glass figurines of a stork, swan, castle, teddy bear, or whatever would fit with the theme. Put them in a box filled with colored shredded paper and put the figurine on top. Any of these would be a great addition to your baby shower.
Hang an umbrella from the ceiling filled with stuffed animals. Or you could put flowers inside and add balloons, dolls and/or ribbons.
Fill a bucket, bowl, or basket with candy, small stuffed animals, or flowers.
If the baby shower is in the fall or winter. Use small pumpkins, headstones, or leaves of different colors. Pumpkins could be made of tissue, or small figures of pumpkins.
Tropical Themes could use many different items to make your baby shower center piece. Pineapples, tiki lights, small palm trees, hula dancer center piece, or a flamingo.
Nautical themes could use small boats, ships, sailboats, anchors, or a treasure chest.
Spring themes could include items such as hearts, leprechauns, or bunnies.
Western themes could use straw, cowboy hats, cowboy boots, western badges and rope.

These are just some ideas to choose from. Think about them, mix and match, or add your own ideas to make centerpieces that perfectly match your theme. You and your guests and guest of honor will have a fun day. They will be getting away from reality for a short time to rest and enjoy themselves.

Recipes:

Easy Hawaiian Cake

1 yellow cake mix, 1can crushed pineapples (juice reserved)

3 eggs, ½ C real mayonnaise, ½ C oil, 1 pkg. lime jello mix, 1 banana,
1/8 C coconut flakes, 1 container cool whip, 1 pkg banana pudding mix,
1C pineapple juice and water (or coconut milk)
Cake and pudding mixes (just the powder) in a bowl, stirred.

Combine the dry ingredients, eggs, mayo, oil, water, juice, and/or coconut milk. Mix well with electric mixer, then fold in pineapple. Bake at 350 until toothpick comes out clean. Set in fridge to completely cool.

Mix Jello, using quick method. Poke holes in cake with fork, pour on Jello mixture, arrange a layer of sliced banana, top with cool whip, and sprinkle with coconut. Refrigerate for at least an hour, and as much as 24 hours ahead of time.

Easy, Sea Water Punch:

1 gallon lemonade (can use prepared powdered lemonade mix)

List Of Negative Calorie Foods

You will find a list of negative calorie foods below, but first let's consider what this means. There is no such thing as a negative calorie - a calorie is a unit of heat and it cannot be negative. So when people talk about negative calorie foods, this just means a food whose calorie level is low enough that it takes more energy to eat and digest it than the food contains.

For example, if you consider water to be a food, then cold water is certainly a negative calorie food. It contains no calories at all and the body has to expend energy to bring it up to blood temperature. So every time we drink a glass of cold water we burn up a couple of calories and lose a little weight. But there are very few foods like this. Most foods that are on the list do not really use more calories than they add, or if they do the effect is negligible... until you remember that at the same time the body expends energy just to keep alive and breathing. Celery for example does not give us enough calories to cover both the energy that it takes to digest it, plus the energy that we expend even when we are doing nothing. So that is why people call it a negative calorie food.

Negative calorie foods are most attractive to anorexics. A negative calorie diet would obviously result in starvation in the long term and nutritional deficiencies can occur surprisingly quickly. The calories burnt usually come from muscle mass, and the result is debility and wasting.

A more healthy way to use a negative calorie diet is as a form of fasting or detox. It is something you can do for one to three days right after the Christmas season or another time when you have been eating a over-rich diet. Provided you are otherwise healthy it can be a great way to clean out the system. However it is still best to take medical advice before attempting this.

If you decide to use a negative calorie detox, keep the following points in mind:

1. It is never a good idea to eat huge quantities of one type of food, especially fruits. A lot of foods contain substances that can be damaging if consumed to excess. For example, the acid in grapefruit and pineapple can damage your stomach lining. Other foods put an excessive burden on the liver or may cause diarrhea. So try to use all the different foods in small quantities.

2. Do not spend all day eating. You will just become bloated and feel sick. If you are only doing this for a couple days, you should not feel too hungry. Plan four or five salad meals each day, and let your digestion rest at other times.

3. You will feel more satisfied if you eat slowly and chew your food thoroughly. You will also use more calories that way. So if the foods can be eaten raw, that will be more effective than cooking them. Foods like carrots and beets will also be more satisfying if you eat them grated.

4. Schedule time when you do not have any important commitments. As with fasting or any kind of detox, you may suffer some uncomfortable symptoms including headaches, tiredness, depression and irritability. If these become severe, stop the diet and see a doctor.

5. When you end the detox, plan a gradual return to normal eating.

What Can I Do About My Itchy Legs?

I am a dancer in my 20s and for more than a year have suffered from terrible itching of my lower legs. I have tried not shaving, not wearing anything synthetic, not using perfumed soap or creams (using instead E45, Eucerin, calamine lotion and olive oil), avoiding heaters - everything imaginable. The itching is more along the shins and sides. I massage with grapefruit and fennel aromatherapy oils every evening and raise the legs for 20 minutes. Could the problem be hormonal (I don't take the pill) or dietary-related? The itching is unbearable, and once I start scratching I can't stop, even if the skin starts to bleed.

Answer:

To determine the exact nature of your skin condition, wish I could see the affected area of your legs which leads to this unbearable itching. A common cause is varicose veins, which are usually located in the shins and inner sides of the calves, as you describe. They itch because their walls are overstretched and the nerves pick up the irritation. When people stand up, the veins swell and cause more irritation to the nerve endings. However, I am doubtful whether this is your problem since you are a dancer and use your legs a lot. Massage is helpful, as are the grapefruit and fennel oils you use. The key is to massage the legs downwards from the groin area and along the areas of the itch, squeezing the calves then letting go. This releases the tension there and allows the deep vein to function better. In turn, it reduces the stress on superficial veins so drat the irritation stops;

Doctors of traditional medicine know that excess stomach acid makes the skin sensitive (and sometimes the joints more achy). I have observed this condition for more than two decades. People who eat a lot of oranges and citrus fruits, as well as sour foods such as vinegar, pickles, olives, pineapples and mangoes, frequently suffer from sensitive skin. They suffer itching in different parts of the body and, in some extreme cases get rashes. My hunch is that your itching is more likely to be diet-related than hormonal.

Sometimes the fungal infection candida can cause itching. What you are trying to achieve with scratching is to improve the blood flow so that the whatever irritates the nerve endings gets recycled. The sweat or sebaceous glands in the skin can then eliminate the toxins better.

My suggestions are as follows:

Diet

* Drink freshly made carrot juice (organic if possible) every other day.

* Avoid citrus fruits (oranges, grapefruit, lemons) and pineapples, kiwi, tomatoes, mangoes, pickles, vinegar, wine and champagne.

* Avoid yeast products and sugar, or sugary foods, which all feed candida

* Avoid cheese and mushrooms because they are fungal and may exacerbate the problem.

* Avoid curries, spicy food, deep-fried foods, which produce stomach acid as do nuts, coffee and excess salt.

Supplements

* Detox Tea: soak in a cup of hot water overnight, strain and drink every morning for one month to cleanse the gut.

* Aloe vera:ake one twice daily with breakfast and supper for two months, to help heal the skin.

* Propolis cream: apply on the affected area at bedtime.

Therapies:

*Homoeopathy: consult a homoeopath, or try Arcen Alb 30, or Apis 30: take two three time daily for five days.

* Acupuncture often helps with chronic itching.

1-3 tbsp Protein Powder
A few ice cubes

#4: Banana-Strawberry High Protein Shake

1 Banana (Sliced)
2 tbsp Protein Powder
6 Strawberries (Sliced)

1/4 cup of Natural Berry Juice

Summertime Gelatin Dessert Recipes and Tips

Nothing says Summertime like a good old-fashioned gelatin dessert.

As a child, I can remember my grandmother and great aunt competing with each other, to see who could come up with the best dessert for our annual Summer family picnics. I have to admit, my great aunt usually won! I think gelatin desserts are just as popular now, as they were back then. With such a variety of recipes available today, you could make a gelatin dessert every week for the next 2 years, and never eat the same dessert twice.

To make gelatin desserts, you will need to invest in a gelatin mold. These molds usually have 3 parts: a bottom seal, a top seal and then the ring. A variety of companies make gelatin molds, and they can be easily found in any kitchen shop or department store.

Gelatin Dessert Making Tips

1. Keep your gelatin desserts refrigerated for best results. Letting them sit out for long periods of time, can cause spoilage or melting.
2. Store your desserts in an airtight container to prevent a thick rubbery gelatin skin.
3. You can lightly spray your gelatin mold with non-stick cooking spray to help prevent sticking.
4. Drain all of the liquid from canned fruits before adding them to your gelatin. If you add too much liquid, you can cause your gelatin to not set up properly. If you do decide to use fruit liquid, you will need to decrease the amount of water in your recipe.
5. You can un-mold most gelatin desserts onto a plate or platter lined with fresh lettuce leaves. This makes a nice presentation.

Here are 4 of my favorite recipes.

Pineapple Cream

1 (20 ounce) can crushed pineapple
1 (3 ounce) pkg. lime gelatin
1/2 pint lite cream
1 (8 ounce) pkg. cream cheese

Bring pineapple to boil. Add lime gelatin and stir until dissolved; let cool in pan. Put cream and block of cream cheese into blender. Mix. Combine blender ingredients with the ingredients in pan. Pour into Jel-Ring mold. Chill overnight. Remove seal to un-mold and serve.

Triple Orange Delight

6 oz. pkg. orange jello
2 c. boiling water
1 pint of orange sherbet
1 can mandarin oranges, drained
fresh orange slices for garnishing

Dissolve orange gelatin in boiling water. Add orange sherbet, stir until melted. Add mandarin orange slices. Pour into the Jel-Ring mold and refrigerate until set. Un-mold onto a serving plate; garnish with orange slices.

Cherry Cola Fantasy

1 c. canned pitted cherries, drained
3/4 c. sugar
1/2 c. water
6 oz. box cherry gelatin mix
1 c. chopped nuts (optional)
1 c. crushed pineapple, drained
1 bottle (12 ounce) Cola Soda

Combine cherries, sugar and water; bring to a boil and boil for one minute. Stir in the gelatin mix using a spatula. Add chopped nuts (optional) and crushed pineapples. Mix together, stir in cola. Pour into the Jel-Ring mold and seal. Refrigerate for 6 hours. Un-mold onto a serving plate.

Raspberry Cream

3 oz. pkg. raspberry gelatin
1 c. whipping cream, whipped
10 oz. frozen, thawed, drained raspberries

Dissolve gelatin as directed on package, using 1 cup boiling water and berry juice with cold water to make 1 cup. Chill until almost firm. Beat gelatin until foamy. Fold together whipped gelatin, whipped cream and drained berries. Pour into Jel-Ring mold and refrigerate until firm.

Known as the Dirty Dozen, conventionally grown peaches, apples, sweet bell peppers, celery, nectarines, strawberries, cherries, pears, imported grapes, spinach, lettuce and potatoes contain the highest levels of pesticides, according to the Environmental Work Group (EWG), a nonprofit research organization in Washington, D.C.

Up to 20 different pesticides are used in the traditional production of the Dirty Dozen and contrary to popular belief, simply washing or peeling your fruits and vegetables doesn't guarantee elimination. The pesticides used are often absorbed into the plants, which allows them to bind to the fruits and vegetables, making it impossible to eliminate their presence.

The chemicals within these pesticides are reported to disrupt your immune system, nervous system, reproductive system and hormonal system.

While washing and rinsing fresh produce may reduce some pesticides, it does not eliminate them. Peeling also helps remove some of the pesticides, but valuable nutrients often go down the drain with the peel.

Because the toxic effects of pesticides are worrisome, not well understood, or in some cases completely unstudied, shoppers are wise to minimize exposure to pesticides whenever possible.

Consumers who switch to organic versions of these foods could cut their pesticide exposure by almost 90 percent, according to EWG. It analyzed nearly 43,000 tests conducted by the Department of Agriculture and the Food and Drug Administration between 2000 and 2004.

Kathy's Cafe: Rules for Healthy Eating suggests: "Commercially grown fruits and vegetables are filled with herbicides, pesticides and fungicides. It is estimated that the average American consumes one pound of these toxic chemicals each year. Research has linked these toxins with breast and prostrate cancer, as well as auto-immunity and numerous other diseases. Studies have shown the mineral content of organic fruits & vegetables to be twice as high as those in commercially grown."' This is compelling information and these risks can be easily and effectively eliminated.

If your family replaced just these 12 fruits and vegetables, on a consistent basis, you would be dramatically decreasing your toxic intake and significantly increasing your health and well being.

Proteins

Stick to lean proteins - turkey and chicken breasts; beef sirloin, tenderloin and top round; all types of seafood and shell fish; veal chop, cutlets and top round. For vegetarian dishes, use soft, low-fat or lite varieties.

Starches

Make sure to use whole-grain or whole-wheat varieties, ones that are rich in fiber. Check the ingredients to avoid "enriched" or white flour, aim for whole wheat flour instead. High-fiber cereals are also a good choice.

Eggs, Dairy & Cheese

Buy eggs or egg substitutes. For dairy and cheese, you should look for non to low-fat varieties. For yogurt, make sure to use plain and non-fat. String cheese (Mozzarella, Cheddar or American) makes for great snacks.

Nuts

Spices and Seasonings

Spices and seasonings are very useful for spicing up what would otherwise be bland dishes. Just make sure that you are using spices that contain no added sugar. Broth is great for making soup while extracts (like almond and vanilla) are useful for desserts.

Now that you have your shopping list, a good trick to remember is to stick to the outside perimeter of grocery stores. That's usually where vegetables, meats, dairy products and other essentials are stocked. Most of the highly processed foods are stocked in the middle aisles. 1. Mangoes

The ubiquitous national symbol of the Philippines, the mango is known for its sweet, tart flavor and juicy flesh. Guimaras mangoes are said to be the sweetest in the world, although the Davao and Zambales varieties are in close contention. If you're not into sweets, green mangoes might be more to your tastes. Filipinos are the only people who eat mangoes raw-usually with bagoong (shrimp paste), salt, or sugar.

2. Bananas

Philippine bananas can be eaten by themselves or used in cooking, usually for snacks (turon and banana cue) or Filipino desserts recipes (banana cake, pancakes). There are several varieties, from the finger-sized senoritas to the large, spotted Cavendish. The saba bananas, more correctly called plantains, are thicker and often used with soups and meat dishes.

3. Pineapples

Like mangoes, Philippine pineapples are unrivaled when it comes to taste and quality. They're said to be infinitely sweeter than Hawaiian or Australian pineapples, which are more popular outside the country. 4. Papaya

Raw green ones are used in many Filipino food recipes, such as tinola (chicken stew) and atsara (pickled salad).

5. Langka

Langka or jackfruit is far from inviting on the outside, with its large, irregular body (it's the largest tree-grown fruit in the world) and its thick, spiky shell. Outside Asia, it's usually sold canned and in syrup, but most locals will tell you it's best eaten fresh. The flesh is sweet and chewy, and the seeds are soft and slightly sticky. Langka seeds are used in many Filipino recipes, often cooked in coconut milk and mixed with meat, vegetables or other spices.

6. Coconut

People like to joke that no part of the coconut tree goes to waste, from the roots to the tips of the leaves. But the fruit is no doubt the most versatile part of all-you can eat it fresh, drink its juice, recycle the husk, and cook with both the milk and the flesh. Coconut cream or gata is practically a staple in Filipino cooking recipes, particularly in Bicolano cuisine where it's often used with chili.

7. Watermelon

Watermelons are said to be the ultimate summer fruit. The cool, sweet juice and crunchy flesh make it a popular dessert on hot days. Eat it in fresh wedges or use it to make a nice summer cocktail. Red watermelons are the most popular variety, but yellow watermelon is also remarkably sweet and definitely worth a try.

8. Calamansi

Fondly called the Philippine lemon, calamansi is often considered a vegetable because of its wide use in Filipino viands and meat dishes. 9. Avocado

Avocados go for up to $2 (P100) apiece in the U.S., whereas in the Philippines you can get at least three large pieces with the same value. This sweet, fleshy fruit is currently all the rage in Western countries because of its newfound health benefits-it's rich in potassium, and vitamins B, E and K. Kids like to eat this sweet, fleshy fruit sweetened with milk or sugar; others use it in shakes, salads and desserts.

10. Durian
