Many European sausages contain filler material. Barley or buckwheat groats are added to Polish blood sausages and white blood sausage usually contains rice. In England oatmeal, rusk, and bread crumbs are often included. In Asia rice is often added to regular sausages and to fermented ones, as rice ferments quite well.

Swedish sausages are known to contain potatoes and they are naturally delicious. Grilled sausage served with potatoes tastes great so why not incorporate both elements, meat and potato, and stuff them into a casing. Swedish potato sausage is a classical sausage. This means that it has a well defined character that separates it from others. Quite often people let their imagination run loose and they mix meat with ingredients such as apples, raisins, pineapples and others and mental that they have created a masterpiece. In reality they have just created someone else version of a easy sausage and it is doubtful either others will like such an invention.

Swedish potato sausage is liked by everyone and is very easy to make. It is a fresh sausage, this means it has to be refrigerated and fully cooked before serving. It may be cooked after stuffing and will become a ready to eat sausage, but it still has to be refrigerated.

Recipe

Materials:

pork 400 g, 0.88 lb.
beef 300 g, 0.66 lb.
potatoes 300 g, 0.66 lb.

Ingredients per 1000 g (1 kg, 2.2 lb) of meat:

salt 20 g, 3 tsp.
white pepper 4.0 g, 2 tsp.
allspice, ground 2.0 g, 1 tsp.
small onion, 30 g, 2 Tbs.
water 125 ml, ½ cup

Instructions:

1. Grind meats, boiled potatoes and onions straight through 3/8 inch plate.
2. Mix water with salt, pepper and allspice and mix all well together.
3. Stuff into 36 mm casings.
4. The sausage can be fried, baked or boiled. You may place it in a skillet with water to cover, bring it to a boil and then simmer on lower heat for about 20 minutes.
5. Store in refrigerator.
6. Cook before serving.

Notes:

The sausage can be made with raw or boiled potatoes. It is better, however, to use boiled potatoes, for the sausage may not be cooked as completely as raw potatoes require. Furthermore, if the sausage is not immediately cooked, the raw potatoes turn dark and gray, discoloring the sausage.
